Toddler Approved Oatmeal Muffins

I swear my kid woke up one day and just stopped eating.

From a young age, my boy like to EAT. As a newborn I couldn’t nurse him enough and when he finally started getting purees and solids he was pumped. He would eat and eat. Whatever I put in front of him was gone.

He was a busy boy. Always on the move. He started walking at 11 months and then it was game over from there. Anything he could crawl, jump, or run on he would try it.

So I assumed this was why he was always STARVING.

Until one day I offered him his typical favorite breakfast and he lost it. He screamed until he couldn’t catch his breath and threw his body on the floor. I was at a loss for words.

This carried on into every single meal, every single day for what felt like forever. Many times I would give up and let him go without eating, other days I would give in and let him eat puffs for every meal.

Finally, his mood started taking a turn for the worse. My typically happy baby was constantly throwing tantrums and crying over every thing. Not to mention his digestive system was all out of whack. I knew I needed something that was nutritious, yummy, and easy for my on the go toddler to eat.

I had recently read about the great importance in Iron for toddlers and children so I was determined to find a way to get him to eat his oatmeal. This when I decided to throw all his favorite foods into one and make convenient breakfast muffins he would enjoy.

I wanted something I could feel good about feeding him daily so I avoided adding any added sugar or processed foods but still added a few “treats” that would make them enjoyable for him.

Let’s just say they were a hit! Little man is back to eating and being his normal happy self. Not only has it helped improve his morning meal, but its kept him satisfied and I swear it improved his eating habits at every meal but this could be just me!

Give this a try! Your toddler will be happy and so will your sanity!

TODDLER APPROVED OATMEAL MUFFINS

  • 1/2 Cup Traditional Oats
  • 1/2 Cup Oat Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • Pinch of Nutmeg
  • 4 Bananas
  • 1/4 Cup Coconut Oil (melted)
  • 1/4 Cup Honey ( I used Raw Cinnamon Honey)
  • 1 Tsp Vanilla
  • 1 Egg
  • Toppings: Strawberries and Mini Chocolate Chips
  1. Preheat oven to 375.
  2. Start by mixing all dry ingredients: Oats, Oat flour, Baking Soda, Baking Powder, Cinnamon, and nutmeg.
  3. In a separate bowl, mash the bananas using a fork.
  4. Add the wet ingredients to the banana: Coconut oil, Honey ( I warmed the honey up prior to adding it to make it runnier), Vanilla, and egg.
  5. Combine
  6. Add the wet ingredients to the dry mix and combine.
  7. Spray a 12 muffin tin or line with cupcake liners.
  8. Equally distribute the mix between the 12 muffins.
  9. Chop strawberries (or any berries) and add on top of uncooked muffins along with a few mini chocolate chips.
  10. Bake for 25 min.

NOTE: You can replace Coconut oil with peanut butter but I would recommend warming it up as well to help mix it.

These are great for moms too! I am so tempted to steal some when I am not feeling cooking for myself πŸ˜‰
