Protein Pumpkin Waffles

At one point I swear I had a waffle addiction. I would eat it for breakfast, force down some veggies for lunch and dinner and then eat some more before bed. I loved pumpkin waffles, banana waffles, oatmeal waffles, regular waffles! Any form!

The fun part is you can do so much with them and they are super easy to make a complete, well-rounded meal by adding protein and healthy fats! The topping ideas are endless, as well as the type of batter you make. My go-to was always pumpkin but you could switch that out for banana, sweet potatoes or even just plain oatmeal.

I ate my yummy protein waffles every single day for years! Literally years! Until I got pregnant and then I could no longer stomach them 😭😭 I instead replaced them with cottage cheese and pepperoni sticks which were my only random early pregnancy craving lol!

Back to the waffles, they are seriously SO easy to make and unbelievably delicious! You’ll just need a few simple things:

•Waffle maker ( I used Cuisine Art. Only $40 and makes four huge waffles!)

•Some form of starch. I used both pumpkin and gluten-free oat flour. You can also blend regular oats to make your own flour!

•A protein powder if you want it

•Baking powder, salt, cinnamon

•Toppings of your choice!

I’m a sweets addict so I would add Enjoy Life mini chocolate chips, bananas, and powdered peanut butter. I would mix the peanut butter with more water than it calls for so it would be more like a drizzle, amazing!

Start by adding your pumpkin, oat flour, 1/8th tsp baking powder, dash of salt, and a scoop of protein powder in a bowl. You can manipulate the amounts to fit into your set calories but I used 1/4 cup of canned pumpkin and 70g of oat flour. Add water until it’s slightly thicker than the consistency of pancake mix.

You want to make sure there isn’t too much water or it will dissolve under the heat and leave you with flat, empty, and burnt batter.

****DO NOT WARM UP THE WAFFLE MAKER. Many recipes will call for that and they will burn and start to cook before you can even finish adding all of the batter.

Spray your waffle maker with your choice of cooking spray ( even if it’s nonstick, I recommend this) Pour the batter into your waffle maker so that it’s full but not close to the top. I prefer thinner, crispier waffles but I also found that filling to the top can lead to a disaster.

You may have to use a fork or knife to push the batter around each square since it is a little thicker (again you don’t want too much water or it will be disastrous).

Then just close the top, start it up and wait! For the first few times, I would recommend checking on them before the buzzer goes off just to make sure the timing is right with your waffle maker and this batter. Mine worked perfectly to the buzzer.

Once finished just remove, add your toppings and enjoy a delicious, guilt-free meal!
